Asparagus may not be everybody’s favourite vegetable. However this recipe for asparagus soup is one that even those who eschew the green spears, might find hard to resist. My husband loves this soup and he is no fan asparagus. It’s all about the bacon!
Ingredients
1 lb fresh asparagus
½ diced sweet onion
2 cups of chicken broth
1 tbsp olive oil
3 strips of raw bacon (chopped into 1 inch pieces)
⅓ cup grated Parmesan cheese
¼ tsp chili pepper flakes
Salt and pepper to taste
Directions
Cut the tips off the asparagus spears and set aside
Chop the asparagus stalks into pieces about ½ inch thick
Place the chopped stalks and diced onion into a pot, add olive oil and ¼ cup of the chicken broth
Let the mixture cook until stalks have softened, then add the bacon and 1 cup of the chicken stock and the chili peppers
Let the mixture boil until asparagus is completely softened and bacon is cooked
Puree the mixture with a blender or mixer until all bacon and asparagus are gone
Return to pot and bring to a simmer, add Parmesan cheese and add remaining chicken broth and continue to simmer.
Steam the asparagus tips to add as garnish in soup, along with another sprinkle of Parmesan and serve
